JR-West Hotels' "Sustainable Curry" was created in 2023 with the aim of reducing food waste by utilizing "wasteful ingredients" that would otherwise be discarded despite still being edible. This year's curry roux uses upcycled coffee grounds after extraction, as well as cocoa husks and vegetable flakes made from vegetable peels. The aroma and richness of coffee and cocoa are layered with the umami of vegetables, resulting in a deep and complex flavor. Please take this opportunity to enjoy this sustainable menu that takes into consideration local production and consumption and the reduction of food waste.
