(2020/5/12)
Enjoy Hotel Granvia Kyoto at home
Here are some recommended wines carefully selected by sommelier Takami.

Wine trivia, part 1

Understanding the general characteristics of the grape variety used to make the wine makes it easier to imagine its taste.
In addition, we also check the climate of the country of origin.
Even within the same variety, those grown in warmer regions have a rich, full-bodied flavor, while those grown in colder regions have a crisp, refined taste.

Wine trivia, part 2

To find your favorite wine, first try to relax and enjoy it.
If you find a wine label (also called an etiquette) that interests you, check the brief description of the wine's flavor on the back. You can then search for more details on your smartphone.
With such a wide variety of wines available, you're sure to find something you like.

"Cellar Selection Sparkling Sauvignon Blanc"

This is a rare sparkling wine made from Sauvignon Blanc, a grape variety representative of New Zealand.
The bubbles are elegant and delicate, and the taste is refreshing with aromas of citrus fruits such as grapefruit and herbs.
Please chill thoroughly before serving.
Incidentally, it uses a resealable cap called Zork, so no opener is needed. You can enjoy a good head of foam even the next day.

This is perfect as a snack!

"Fish carpaccio with lemon dressing"
Raw fish can sometimes have a stronger fishy smell when paired with wine, but if you buy sashimi from the supermarket, try rinsing it immediately with water and then marinating it in salt and sake.
Its compatibility with wine improves dramatically.
To pair this wine, choose a citrus-based dressing.

"Riscal Tempranillo"

This is a casual line bottle from the producer of the wines featured on Cotoshière's wine list.
This is a full-bodied wine with rich, concentrated blackberry-like fruit flavors and a lingering finish of spices such as black pepper.

This is perfect as a snack!

It might seem like an unusual pairing with wine, but this wine goes really well with yakiniku (Japanese grilled meat).
It also pairs perfectly with Kansai's soul food, such as okonomiyaki and takoyaki!
This sauce has a strong presence that can stand up to the rich flavors of yakiniku sauce and Worcestershire sauce, which are made with a variety of ingredients such as fruits and spices.
