After completing a two-week internship at Ferrandi in Paris, considered one of Europe's leading professional training schools, I am now diligently studying cooking at a restaurant in Remis, a town in the Champagne region of northeastern France.
It seems like it's still hot in Kyoto, but here it's already starting to feel a bit chilly, like autumn is arriving.
Recently, I went to the indoor market "Halles Du Boulingrin" in Reims. Shopping at a market called a "marché" is a common practice here.
At the market that day, instead of summer vegetables like bell peppers, tomatoes, and artichokes, there was an increase in mushrooms such as porcini and chanterelles, and plenty of mirabelle plums, a fruit that signals the end of summer and the beginning of autumn.
"Mirabelle" refers to a type of plum known in Japan as a Western plum, characterized by its golden color and elegant sweetness. Approximately 70% of the world's Mirabelle plums come from France, with the Lorraine region in the northeast being particularly famous.
That day I bought some mirabelle plums and paired them with champagne. They were a perfect match and absolutely delicious.
Kyoto is also entering the season of delicious foods such as matsutake mushrooms, chestnuts, and autumn eggplants. We hope you all enjoy the "autumn of appetite."

This time, I'll introduce a shop I visited in Paris when I first came to France for my training.
"Auguste" is located in the 7th arrondissement of Paris. It's a one-Michelin-star restaurant in a chic area close to the Rodin Museum.
Chef Gaël Oriélu hails from Brittany, a region on the Atlantic coast. He is renowned for his seafood dishes, and he trained under the world-famous three-Michelin-starred chef Yannick Alléno.
Lunch courses start from €37, which is quite reasonable even among Michelin-starred restaurants in Paris!
The chic yet casual atmosphere inside the shop made me feel very comfortable.
