(Vol.1) Three glasses will open up a whole new world of wine.

Cotoshiere's wine seminars are popular events that are always fully booked.
This event, where a chef prepares dishes to complement wines selected by a sommelier, allows guests to enjoy the perfect pairing. What kind of theme or concept is used to create this event?
Chef Matsumori and Sommelier Takami will share their thoughts on the event.

We offer three types of wine selected by our sommelier from around the world.

First, our sommelier will share some fascinating stories about wine with you.

Following that, you can enjoy a special lunch prepared by the chef, perfectly paired with wine.

"To make the theme easy to understand, we select grapes with unique characteristics and stories, such as the grape variety and the way they are made," says sommelier Takami.

"In a previous sparkling wine seminar I led, I selected French Champagne [GH. Mumm] as the main wine, and for the other two, I chose a Spanish Cava and a sparkling wine made from 100% Koshu grapes from Yamashina Prefecture. By comparing them side-by-side, participants were able to appreciate the unique flavors of each and experience the characteristics of each country's wine."

Another highlight of this seminar is the provision of food paired with wine.

"Foods from the same region tend to go well together, so we create our menus based on the local cuisine of the area where the wine is grown," says Chef Matsumori, who is in charge of the food.

We carefully prepare each dish, paying attention to every detail, such as adjusting the sauce flavor right up until the event starts.

Furthermore, in order to create a memorable experience, at an event featuring wine from Florence, Italy, they added a surprise element by creating a large, traditional Florentine cake and delivering it to the tables on a large platter.

One of the appealing aspects of the seminar is that the instructor, a different sommelier, changes each time to match the theme, giving each session a unique atmosphere and content.

Sommelier Takami says that what he values most is introducing wine from a different perspective.

"It's important to include topics that make wine more accessible, such as introducing sweets made with Chardonnay. The dishes will also change each time to match the theme, so I think you'll enjoy attending each seminar. We look forward to your participation."
