Bakery chef Takashi Matsuki receives special award for California raisins.

This raisin bread uses "colatura," a traditional Italian condiment, and combines it with red wine, brandy, and honey to bring out a natural sweetness and deep umami flavor.
The bread dough is made with raspberries, strawberries, and beets, giving it a pleasant tartness, and the long, low-temperature fermentation process brings out the delicious flavor and sweetness of the wheat, resulting in a moist texture.
